Like most fermented veggies, WeChi is preserved with naturally developing lactic acid and can be safely transported in ambient conditions for many days without danger of spoilage. Once you receive this, pop this in the fridge for peak flavor! Remember, fermented foods were the only method of veggie preservation BEFORE refrigeration.
Side note: The freezer is a great way to store extra WeChi, just know the consistency might change a bit after thawing.

When refrigerated, our fermented foods are typically good for at least a year. That said, the flavor does change over time. So, for best full flavor, consume within 2–3 months of receiving.

We make premium, whole-vegetable-based products by hand, in small batches, which take weeks to ferment. The price of our products reflects our commitment to quality across the board and stands in stark contrast to industrialized, mass-produced foods.
Also, the price of our online products all includes shipping. This way, we can provide a “free shipping” experience for our customers where the more they buy, the better price they get. If you love WeChi, we recommend stocking up so you can save!

Fermented foods are foods that have been transformed by beneficial bacteria (probiotics) into things like organic acids and other beneficial compounds. This process changes the flavor (often tangy, complex, or slightly sour), multiplies in gut loving microbes and has helped preserve food naturally for thousands of years across all cultures.

Probiotics are live beneficial microorganisms that support your digestive health. Eating fermented foods regularly builds a strong army or "colony" of beneficial gut bacteria.

Both of these terms are closely related but distinct:
Probiotics: Live beneficial microbes
Prebiotics: Fibers that feed those microbes

We generally ship with UPS early in the week, hoping to get you WeChi as fresh as possible before the weekend. Western states take between 2-3 business days from order fulfillment, and the rest of the US generally takes 3–4 business days.

Due to the high cost of shipping, we currently only offer shipping within the continental United States but we hope to ship to other US states and territories as well as internationally in the near future!

Our live and fermented products are safe to ship at ambient temperatures for a week or more. However, they slowly continue to ferment and should be refrigerated upon receipt for peak flavor and texture.

No. These are completely normal signs of active fermentation. Simply unscrew the cap slightly, squeeze out the excess CO2, and pop it in the fridge. Good to go!
